Fishing

We took Landon to a friend's pond yesterday and let him fish a while. We've been running full speed ahead all week with the funeral services Monday night and Tuesday and then we had three individuals in the hospitals that we have been running back and forth to. We weren't able to take our normal days off on Monday and Thursday, so we had to stop the rush and spend some time with Landon. We decided to turn the cell phones off for a couple hours and just relax and spend the evening with a few of our friends fishing.





He's always a happy little boy when he has a hook in the water.


Landon took the next two pictures by himself. He wanted everyone to see his rubber boots and the view from his chair.




I was pretty impressed with this picture he took. He's getting pretty good at working my camera and the zoom lens too. Not bad for a four-yr. old! And you can see why he loved this fishing spot so much...he could watch the horse and fish.



Oh, and by the way...I caught the biggest fish.

Our day as Tourists...in our own city!

Today, we decided that we would be tourists and take in the city of Dallas. It seems to me that many people live in wonderful and beautiful cities and never see or know half of what is there. So, we decided to take in as much as possible today. It's amazing all the things we found and places we had never been. What a wonderful day it was...so great that we plan on doing it again soon since we didn't see half of Dallas today! Here's a few pictures of our day...

YUM!!!

So, this is what I've been making for the last week! Seriously, they are so delicious. Pumpkin Rolls. My sister and I made eight of them last week and on Monday we made ten more. We just got a call tonight for several more orders that we are going to make tomorrow. Seems Thanksgiving is in the air...

Here's the recipe...
1 cup sugar
3/4 cup all purpose flour
3 eggs
2/3 cup pumpkin mix
1 teaspoon cinnamon
1 teaspoon baking powder

Mix these ingredients together and pour into foil lined cookie sheet and bake (375) for 15 minutes. Take out of oven and sit on stove top for 5 minutes to cool. Turn the roll out onto another piece of foil and roll up and put in freezer for 15 minutes.

While roll is in freezer mix together
1 package cream cheese
1 12 oz cool whip
1/2 cup of sugar

When you take roll out of freezer unroll and spread filling mixture onto the pumpkin roll and then roll back up. I roll my pumpkin rolls onto another clean piece of foil so it is neat. These are good in the refrigerator for several days or you can freeze them until the day you want to eat them. Problem is they don't last long once people start eating on it...

My Rock


This man is my ROCK!! After 20 years, I can't think of anyone else but him to be beside me each day and night. I simply could not make it through all the hurts and disappointments this life brings without him . He always replaces the negative things happening in my life with something positive. He holds me close till the storms of life pass. I am a lucky girl!!!

Wisdom from a 3yr old...



I tell you my child is smart. Now, I know that every mother says that about her kid, but....Landon is really into puppets lately. I think it's because our Children's Church leaders at our church are incorporating puppets and puppet shows into some of their services. Landon has drug one of his daddy's old puppets out of the closet and he takes it everywhere with him. He has his own puppet shows and sometimes even comes and talks to me through the puppet.

Well, Landon came to me last night and said, 'Mommy, this puppet is a real little boy like me. He is hungry. Watch him eat one of my chicken nuggets.' So, I watched as he fed the puppet the chicken nugget and laughed at how his little mind perceives things. I was walking out of the room when his next words stopped me in my tracks. He said, 'Mommy, I think the puppet needs to be potty trained like me.'

You guessed it! We had to go into the bathroom and let him sit the puppet on his potty chair. After a few minutes, Landon raised up the puppet's shirt and looked at me really funny and confused. He looked again and said, 'Mommy, I don't think he's gonna be able to be potty trained!'

Ask me how long it took me and his daddy to stop laughing!!! I told you this little boy was SMART! :)
